It’s time for a delicious recipe for an easy and quick lunch! This is a healthy sandwich with different flavors and I will definitely keep making these more often.
After nearly two weeks without meat, I can definitely say I miss it. Especially when we eat with my parents-in-law, because my father-in-law makes delicious meat dishes! But now I have also learned that meat is not always necessary at all! And I really want to keep it that way. Maybe in the future I will really limit my meat intake to one or two days a week.
Today we’re going to try something new at Casa de la Vida: making crispy chickpeas! Often enough I see recipes with hummus, chickpeas on a sandwich, but I find these a bit too bland. That’s why I wanted to give my recipe a little more kick, and what a treat it has become! It takes a little time, but if you make more right away, you’ll have enough to enjoy them for days.
When I was a child, my father used to prepare delicious sandwiches for me, and as a teenager I was always surprised with fresh sandwiches and delicious toppings. That’s something I always said to everyone: ask my father to make you a sandwich, they are really delicious! Just like his salads. My father really is a great cook and always comes up with delicious flavor combinations.
When I worked as a cook at a lunch spot, I often had to make sandwiches. My chef always told me to use my creativity to make them look beautiful and tasty. “Use a little bit of this and a little bit of that, a drizzle here and a drizzle there and voilà!” And he was often right. Every time I have to make a sandwich that has to look nice, I think about him and his words. Even though I have not always had a good time with them in the kitchen, I learned a lot from him.
And today I was craving a sandwich with guacamole, roasted peppers and roasted chickpeas! I was going to make the sandwich, but I didn’t think it looked quite ‘finished’ when I went to take the picture. I often make vinaigrettes at home, which can be kept for a few days if you cool them properly. The leftovers from them always come in handy when I’m making sandwiches that need a little extra kick.
And this vinaigrette is exactly what finished the bun. So today was a successful day: I learned how to make roasted chickpeas and I made a delicious sandwich that I will definitely eat more often!
Still, I think everyone has a different taste. Not everyone likes goat cheese or avocado, but I’m sure that with a little creativity, anyone can make their own sandwiches delicious. So today I am sharing my favorite sandwich of this month with you.
Ingredients
for 1 baguette
For this recipe I used roasted peppers from a jar. It is a product that is made entirely in Murcia!
- baguette
- canned chickpeas
- olive oil
- salt and pepper
- paprika powder
Sandwich 1
- roasted peppers
- lemon juice
- avocado
- Parmesan cheese
Sandwich 2
- spinach
- orange juice
- goat cheese, crumbled
Vinaigrette
- mayonnaise
- salt and pepper
- orange juice
Preparation
Drain the chickpeas, rinse well with cold water and then let them dry for a while. In a bowl, mix them with olive oil, salt, pepper and paprika. Mix well. Heat a pan over high heat and add the chickpeas. Let them bake for about 15 minutes until they are nice and crispy. Shake them every few minutes so they don’t burn, or lower the heat. Remove them from the heat and place them in a deep plate so that they can cool for a while. Watch out, they can be very hot!
Pour some olive oil into the same pan and let it heat up. Cut the baguettes open and in half and grill them on both sides before removing them from the pan. Fry the spinach in the pan in which the baguettes were grilled. Add a little orange juice, salt, pepper and paprika and continue to fry until the spinach has completely shrunk. Meanwhile, make your guacamole by mashing the avocado and mixing it with lemon juice, salt and pepper. Cut the roasted pepper into strips. Mix the mayonnaise with a little orange juice, salt and pepper and set everything aside.
Take the pieces of baguette. First put the spinach on one of them, then the chickpeas. Crumble the goat cheese on top. Use another piece of baguette as the top of the bun. First spread a layer of guacamole on two other halves. Then put the roasted peppers on one of them and then the chickpeas. Top it all off with grated parmesan cheese and press the two halves together and your second sandwich is ready too.
Serve both sandwiches with a drizzle of the vinaigrette and voilà, two delicious sandwiches that everyone is sure to enjoy!
The result
I learned something new: roasted chickpeas are really delicious and very simple to make. The best part is that they can be kept for a few days and go with almost everything!
It makes me really happy to learn new ways to give ingredients a new twist. I have to admit that I have learned a lot of new things in the last two weeks. Whether it’s working with rice, tofu, sauces or vegetables, so far nothing has really disappointed me and I think that’s only positive.
I’m sure I can prepare chickpeas in many more ways and the search is far from over. Hopefully my ideas, recipes and blogs can give you these positive insights too! Have a nice weekend, my friends!
