Sweet potato pizzettas

On Friday there is of course a delicious snack with the drink!

We were shooting food for Sweet Potato Month, and since I had a lot of sweet potatoes left, and really needed to finish the shredded mozzarella and tomato frito, I decided to make something quick so we could eat in between. But what could I make from these ingredients? A small pizza with a slice of potato for the bottom. Genius right?

A fun and simple recipe that you can quickly put on the table! Nice as a starter, as a healthy snack or to cheer up your table. You have this on the table in less than 30 minutes. Be careful not to burn your mouth as they taste, smell and look delicious.


  • olive oil
  • 2 medium sweet potatoes
  • tomato frito
  • grated cheese, I used mozzarella
  • black olives
  • 1 tablespoon of oregano
  • 1 tablespoon of rosemary
  • 1 tablespoon of thyme
  • 1 tablespoon of salt
  • 1 tablespoon of pepper


Preheat the oven to 200 degrees on the grill function. Line a roasting tin or oven tray with baking paper and set it aside. Wash and peel the sweet potatoes if you don’t like the skin. Cut the small ends off first, then cut round slices about 1 cm thick. You will get about 15 to 20 slices from two medium potatoes. Cut the remaining pieces smaller and set them aside. In a large bowl, toss the slices along with a drizzle of olive oil and all the spices except the oregano. Mix everything together well. Place these seasoned slices on the oven tray with enough space in between. The dish with potato slices then goes into the oven for fifteen minutes. You can also grease the remaining pieces of sweet potato in oil and then put it in the oven, so that you have a healthy snack and the pieces of potato are not lost.

Meanwhile, mix 10 tablespoons of tomato frito with 1 tablespoon of oregano, and a pinch of salt and pepper. Cut the olives in half lengthwise. After 15 minutes, remove the baking tray from the oven and place 1 teaspoon of the tomato sauce you made on each potato slice. Do not spread the sauce, but really put a dollop on the center of the slice. Do not spread the sauce on it, but a blob in the middle. Place a heap of cheese on top of the tomato sauce and then the halved olive on top.

Put the dish back in the oven. Keep a close eye on the cheese. It should melt but not brown too much. In about ten minutes, your pizza bag will be ready. You can serve them straight from the oven, with a little freshly ground pepper on top.

Don’t forget to remove the remaining cubes of sweet potato from the oven when your pizza bag is ready. You can enjoy this later in the evening if you are hungry! Or you can save them for the next morning or use them as a delicious topping for a bowl.
