Sticky orange cauliflower

Of course everyone has ingredients or products that they don’t like. It is very normal to know what you like and what you don’t like. For me, the latter often applies to cauliflower. I have never really found a way of preparation that really makes me enjoy it, but during my healthy January challenge I started eating it more often because it tastes quite good in some dishes!

Yesterday I posted on my instagram all the benefits of cauliflower: It is a great and healthy vegetable that we should definitely include in our daily diet, especially if you read what healthy nutrients cauliflower contains! Cauliflower is rich in fiber, can help with weight loss and also contains a lot of anti-oxidants. What more would you want?

Recently I posted a healthy meal with orange juice in the sauce. That was a really tasty surprise, so I decided to try the same with cauliflower, because why not?

It is great fun often to find new ways to cook, by experimenting with woks or other cooking techniques, and I have to say that in the cooking world you never really stop learning, because everyone comes up with new ideas!

I really enjoy making teriyaki or sticky sauces. And, if I may say so myself, I have become quite good at that lately! Of course I want to share that with you, because I am sure you also need a healthy meal. I do after all the sweet cupcakes and delicious cakes of late!

So let’s get started and make a healthy meal together!

Ingredients

With this recipe I was able to make about 3 large bowls (or 4 smaller ones). I used vermicelli noodles, which was actually a really good choice, but you can also use rice or quinoa.

  • 1 cauliflower
  • half a bell pepper
  • 1 zucchini, cut into pieces
  • handful of string beans, cut into pieces
  • 2 or 3 tablespoons cornstarch
  • sunflower oil
  • spring onion
  • chili oil

Sauce

  • juice of 1 orange
  • 1 tablespoon of chili flakes
  • 2 tablespoon of sesame seeds
  • 1 teaspoon of salt
  • 1 tablespoon of pepper
  • 1 tablespoon of garlic powder
  • 1 tablespoon of hoisin
  • 1 tablespoon of honey

Preparation

Put a pan on the stove. Cut the cauliflower into smaller florets and rinse it under the cold tap. Add them to the boiling water and let them boil for 5 minutes. Cut the other vegetables and heat some sunflower oil in a large wok or frying pan. Add the pieces of bell pepper and string beans to the pan and let them fry a little.

Drain the cauliflower, rinse it again under the cold tap and shake the liquid out well. Then sprinkle about 2 to 3 tablespoons cornflour over the cauliflower and shake it a bit again. Then add the cauliflower to the wok and let it grill for a few minutes until it is brown. Put a pan with plenty of water on the fire, and then add the desired portion of vermicelli noodles. Boil the noodles according to the instructions on the package and then rinse them with cold water.

Mix all the ingredients for the sauce well in a small bowl, until the honey is completely absorbed with the other ingredients. Add the zucchini to the wok along with a little oil. When the cauliflower starts to brown slightly, turn up the heat and add two tablespoons of cornstarch.

Stir everything very well and add the sauce immediately. It is true that the sauce will thicken immediately. Now it is very important that you keep stirring so that everything is nicely covered with the sauce. After a few minutes and when the sauce has thickened nicely, you can choose to add the vermicelli. You can also serve the noodles separately from the rest, you can decide for yourself.

Top the dish with some spring onion, sesame seeds and chili oil and voilà, a healthy snack, ready in 20 minutes!

The result

By cutting the vegetables nice and coarsely, this dish has a nice bite. Actually, the cauliflower is quite similar to meat! I am glad I chose the vermicelli, because it goes well with the dish and does not take over the taste or the bite of the dish!

Strangely enough, this dish really had a nice sweet and soft taste. You can also choose to spice up this dish, but that is really your own choice! The sweet taste is partly due to the orange, and that is certainly a taste that I can get used to!
