Delicious!
Ingredients
- 500 gr eggplant
sauce
- 2 tablespoons peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 3 tablespoons water
- 2 cloves of garlic
toppings
- chili flakes
- 2 green onions
- red onion
- cilantro
- sesame seeds
- pickled stuff
Preparation
In a steam basket (I use an Asian one) lay down some baking paper. Cut the eggsplant into long slices, and then into small finger-like pieces of it. Put the eggplant on the baking paper and steam it for about 10 to 15 minutes, depending to your own tastes. I like them more soft. Sprinkle a little bit of salt on top and let them rest.
In the mean time, mix all the sauce ingredients together. You can add a bit more water to make the sauce more liquid, but I like my sauces thick! Taste and adjust to your own taste and let is sit for a while while you prepare the tortilla’s as described on the package.
And now, just build your taco: first some eggplant, then some sauce followed by the toppings! What actually really takes this taco to the next level is the peanut sauce! Don’t worry if you are allergic, you can make a quick nước chấm / gnoch niam! Just mix some fish sauce, lime, mirin and a bit of water!
Voilà, another way to fill you taco! (Boy does this sound dirty, haha)
