Smashed potatoes – a quick snack from the oven

Smashed potatoes: This is not a typo. These tomatoes aren’t mashed, they’re absolutely SMASHED! You’ve probably never heard of cooking potatoes this way, but I’m sure you’re going to love them! This is a super easy snack or side dish to make. You can make them vegetarian or completely vegan, by replacing the butter with oil.

Before I started the Healthy January challenge, I actually had no idea what I would find on my path, what experiences I would get and also which ingredients I would learn to appreciate more.

The potato is an ingredient that I have really come to appreciate. In the meantime I have used them a lot to make my dishes a bit fuller or to make them look fuller, or for quick and simple bites or snacks!

Potatoes are an easy and cheap ingredient that you should store with love, and you also need to know what to cook with them! There are hundreds of ways to prepare this crop, but many people eat them cooked as a side dish, without much flavor. That is of course their own choice, but that is exactly why I don’t like potatoes. They have no real taste of their own without herbs and additives.

The other day I had half a bag of potatoes that were starting to turn green and I really didn’t know what to do with it until I got an idea. Smashed potatoes are super tasty and super easy to make! And that’s what I want to share with you today: my version of the crushed potato, simple and delicious!

This just shows that you can cook anything with things you have in your house. I often have the problem that I don’t know what to do for a while, but once you start cooking creatively with the things that need to be used up more often, it will always work out! And now into the kitchen!

Ingredients

  • 1 kilo of potatoes
  • parsley, chopped
  • 30 gr butter, melted
  • salt
  • pepper
  • olive oil

Preparation

Wash the unpeeled potatoes under cold water. Place a large pan with plenty of water and a teaspoon of salt on the fire. Add the washed potatoes to the water and bring it to a boil. Then let them boil for about 20 minutes. To check if the potatoes are done, prick them with a knife. When the knife comes out clean (without crumbs or pieces of potato), the potatoes are done.

Preheat the oven to 180 degrees. Drain the potatoes and let them cool for about 10 minutes. Place baking paper on a baking tray. In a large bowl, mix your potatoes with olive oil and salt and pepper until they are completely covered. Then divide the potatoes over the baking tray and crush them with a glass or something else with a flat bottom.

Place your potatoes in the oven for about 15 minutes, or until crispy and nice and brown. In the meantime, you can melt butter with parsley and lots of garlic and salt. Remove your potatoes from the oven and brush them with this butter mixture with a brush. Let them bake in the oven for another 10 minutes.

Take them out of the oven, sprinkle with fresh ground pepper and enjoy! Voilà, a nice healthy snack or side dish for your Friday night!

The result

A tasty snack, made easily and quickly! Little fuss and great as a side dish or quick bite. This way, you’ll never have potatoes that are in a corner withering away and eventually becoming too green to be used. You can also use all kinds of spice mixes for this. You can experiment as much as you want!

I was experimenting with potatoes when I found out how easy it can be to grill them in the oven after boiling them and I really liked it! Who knows what other snacks with potatoes I will discover during this lockdown!
