What could be better than a delicious lazy breakfast on a Sunday morning? Just mix it up some ingredients and then just pop them in the oven, what more could you want? Well, today I would like to share my delicious recipe for oven baked sheet pancakes with you!
The recipe is simple and you can actually do or add anything with it. At the time I had pear and blueberries in the house, and that seemed very nice to add. But if you prefer red fruits or pineapple, you can of course just use those!
The idea came to me because I was going to see what would happen if I prepared batter for American pancakes in the oven. That sounds a bit crazy, doesn’t it? In the end, the first batch was a bit disappointing, to be honest. The result was too mealy and quite heavy on the stomach!
So then I thought, I’ll just make another batch with a little more milk and oil, and then divide the batter into two pancakes instead of making one thick pancake! And guess what? The next one came out of the oven much tastier. It took less time in the oven and yet the pancake was a lot less floury! I thought it was a bit too thin, but hey, we can’t have everything, can we?
The best thing about creating breakfasts is surprising my father and Luis in the mornings. Of course they often do not know at all what we are going to eat or what I will arrive with. That’s actually quite funny, because you would think that others in a household would know what’s on the table!
But this is actually the advantage and disadvantage of maintaining a food blog and writing a cookbook: You just don’t really have a fixed rhythm, especially because you are always creating, developing and cooking. But there is no other way! At least, that’s how I experience it!
All of this makes me really happy but also very tired at times. But it does me very good to keep busy for you and to share new dishes with you all the time! So let’s go, let’s head into the kitchen so we can start baking!
Ingredients
For two pancakes in a round ovendish of 24 cm
- 2 apples or pears
- 1 handful of blueberries (fresh or frozen)
- butter
Batter
- 300 gr of flour
- 1 packet of vanilla sugar
- 400 ml of milk
- 1 egg
- 1/2 teaspoon of cinnamon
- pinch of salt
- 40 ml of sunflower oil
- grated dark chocolate
- 1 tablespoon of baking powder
Preparation
Preheat the oven to 180 degrees. Grease two low round baking tins well with butter and sprinkle them with flour so that the pancake doesn’t stick. Peel the apple or pear and cut it into thin slices. Remove the blueberries from the freezer if you are using frozen and not fresh berries.
Gradually mix the flour and milk with a hand mixer or stand mixer. Then add the egg, vanilla sugar, cinnamon and oil. Mix well so that there are no lumps.
Divide the batter between the two baking tins and arrange the apple slices and blueberries as you wish. Don’t push them too deep into the batter. Place the two bowls in the oven for 15 minutes, but check every now and then to make sure your pancakes don’t burn.
The pancakes should be slightly risen and golden brown, but not completely wet. If they are too wet, let them bake for a few more minutes.
When the pancakes are ready, take the pancakes out of the oven and place knobs of butter on top immediately before serving.
Voila! With a little syrup or maple syrup and freshly baked bacon you have a really delicious breakfast!
The result
I’m still baking these pancakes with all kinds of different toppings, but this one is still my favorite! You can also make a savory one, but that’s a bit tricky because you put it in the oven! So fresh bacon next to it really suits it much better!
In less than half an hour you really have a nice snack, so I really recommend making these pancakes with your children or for your husband, boyfriend, girlfriend or your visitors if you really want a delicious breakfast on the table put!
