For this new Monday I have a great and delicious recipe for you! It can be breakfast, lunch or a delicious evening meal! Perfect for one person or for several. The choice is yours to stick to a single portion or to make a whole pizza and share it with everyone!
This puff pastry snack with green asparagus, chorizo, bacon and egg is really a delicious quick bite without fuss and is ready very quickly! But how did I get this flavor?
Recently I made an asparagus-chorizo pizza and I really liked it. So I thought why not make something like that on puff pastry and with an egg on top? And believe me, it really is one of the tastiest things I have eaten in a long time!
Before I came to Spain I didn’t eat green asparagus that often, but nowadays it is really an ingredient that I buy every week and use in my dishes! They are available here all year round, which makes it easier too!
It goes without saying that I now plan to make this dish more often! Thanks to instagram and collaborations and challenges, I keep coming up with wonderful new ideas and of course I am happy about that!
I can’t wait to set up my new kitchen completely the way I want it, so that I can also record great videos there for reels and to show how I cook some dishes. That sounds nice, right?
Well roll up your sleeves and turn on the oven, let’s get to work!
Ingredients
30 minutes
- 1 bunch of green asparagus
- 2 cloves of garlic
- 1 egg per person
- 1 small sheet of puff pastry per person, or a large sheet of 250 gr
- 1 chorizo (preferably fresh)
- handful of mushrooms
- salt
- pepper
- 100 gr smoked bacon
- Emmentaler or young cheese for melting
- 1 tablespoon of crème fraîche per person
Preparation
Preheat the oven to 200 degrees. Prepare a baking tray with parchment paper and cut the bacon into strips, the mushrooms into slices and the asparagus into pieces. Heat olive oil in a pan and fry the asparagus, garlic, mushrooms and bacon together. Add some salt and pepper and cook for a few minutes until the bacon is done.
Prepare a sheet of dough. Make a square around the outside of the entire sheet, without cutting through the dough. Roll up the sides. Squeeze the dough together so that you really get an edge. Prick all over the bottom you made with a fork, but not the rim. Spread the creme fraîche over the bottom, sprinkle a layer of cheese on top and spread a little of the bacon and asparagus mix. Break your egg on top of the mix. Remove the skin from the chorizo and crumble it on top.
Divide the cheese over it again, and a little salt and pepper. Place in the oven and bake for about 15 minutes, or until dough has risen and is just brown enough! Serve it straight from the oven with a little fresh pepper!
Voilà, a delicious snack that you can make many people happy with!
The result
The best thing about these kinds of snacks is that you can make them and completely fill your refrigerator with them. They’re so delicious, you can make all kinds of crazy combinations and therefore this recipe is really perfect against food waste and to empty your kitchen cupboards!
Also, this is a pretty filling snack, so you can do it without bacon and chorizo if you’d like. You can choose everything yourself, but I really recommend that you try this combination of awesome flavors!
