This week we continue the trend of easy dishes. Today’s menu is rolled chicken fillets from the oven with a delicious creamy white wine sauce! What more could you want on your plate? Add a little pasta and a glass of wine, and you’re bound to be happy!
The best thing about this recipe is that you roll the fillets and cook them in the oven. You make the sauce in a pan and add it to the chicken in the oven. Meanwhile, you can prepare the pasta and a salad and voilà! You will have a delicious and healthy dish on the table in no time!
I have to admit that I am stepping out of my comfort zone with this dish. I am not a fan of chicken, neither for eating nor cooking. I don’t like the feeling of having chicken meat in my hands. I have no idea why, it just feels weird.
But as always, I think it’s important to keep cooking with things I don’t like. That way you keep discovering new things and you just keep learning!
Surely you can already guess what my father and Luis said after eating this dish? “You can cook it more often.” And I actually loved this recipe so much that I will be making it more often!
And now let’s get started! I should mention here that it is always handy to have cooking twine at home.
Ingredients
3 to 4 people, 50 minutes

- 450 gr chicken breasts (about 6 slices)
- 8 slices of ham
- 200 gr Gouda cheese, sliced
- salt
- pepper
- olive oil
Wine sauce
- 200 ml white wine
- 3 cloves of garlic
- 3 tablespoons of olive oil
- 1 tablespoon of butter
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon basil
- 100 ml stock (chicken or vegetable)
- 250 ml cream
- 1 tablespoon of flour
Preparation
Preheat the oven to 200 degrees. Prepare a baking dish with a little olive oil in it. Make sure your fillets are thin enough, but not too thin. Sprinkle them with salt and pepper. Place a slice of ham on top of the chicken fillet, followed by a slice of cheese. Then roll up your chicken fillet. Close the roll with a piece of cooking twine and place it in the baking dish. Repeat until all chicken fillets are filled and rolled.
Place all your rolls in the baking dish and drizzle a little olive oil over them. Put them in the oven for 10 minutes. Meanwhile, heat the butter and olive oil together in a pan. Finely chop the garlic and add it, along with the herbs. After a minute, add the white wine and stock. Let the mixture reduce for about 4 minutes, then add the cream, salt and pepper. Stir everything well, let it cook for another minute and then turn off the heat.
Remove the chicken rolls from the oven, add the white wine sauce to the baking dish and return it to the oven for 20 minutes. In the meantime, prepare your pasta of choice and make a nice fresh salad.
Serve the rolls immediately from the oven, but be careful not to eat the strings!

The result
You are not obliged to use ham in your chicken rolls. You can also use extra cheese, or replace the ham with something else! I actually started out with a different outcome in mind, but I’m so pleased that the recipe ended up like this. We certainly enjoyed this meal!
The meat came from the butcher. He cut it neatly for me and I was really very happy with that, if I can be honest. As I said, I don’t like working with chicken. As you see, you can really cook with anything you already have at home. This recipe is a perfect example for my #pantryclearingchallenge!
Officially these rolls are not called pollitos, but rollitos de pollo. Pollitos is of course a funny name you get when you put that together. Sometimes you just need a fun and catchy name for your dishes, right?
