Delicious and easy, perfect topping for taco’s and more!
Ingredients
This recipe is for a 1 liter mason jar
- 200 ml apple vinegar
- 400 ml water
- 70 gr sugar
- 1 tablespoon yellow mustard seed
- 1 tablespoon salt flakes
- 1 handful mixed peppercorns
- 1 tablespoon all spice berries
- 3 small bay leaves
Preparation
With a mandoline slicer, grate the radishes into fine slices and set these apart. Prepare all the ingredients. Pour the water and the vinegar into a pot together, and bring this to a quick boil. Turn the heat down to a slow simmer.
Add the spices, salt, and sugar and stir everything very well. Now add the radishes and let the pot simmer up to a few minutes. Then turn down the heat and let everything cool in the pot..
Prepare your jar for the radishes. I love using mason ball jars for pickling! I cleaned mine with hot water beforehand. After 30 minutes, pour the liquid and the radishes into the jar and screw the lid on.
Leave the jar for a few hours, so it can cool off completely, and then put in the fridge. Let the jar sit and pickle for a few days. Then, it’s time to enjoy them as a topping or just as a healthy snack!
