Lemon, garlic and padrone! What else?
- padrone peppers
- 3 garlic cloves
- handfull of grated old cheese
- 2 lemons (for juice)
- one cup of boiled pasta water
- olive oil
- roasted pumpkin seeds
- sea salt flakes
Cook the spaghetti. Keep one cup of the pasta water. In a pan, combine the olive oil, the garlic and the spaghetti. Stir very well and add the water. Now turn up de heat and add more olive oil and the lemon juice. Stir and add salt and pepper, Keep stirring until most of the cooking water has evaporated.
In a skillet, add some olive oil and let the padrone peppers grill. Turn them when they turn brown. Transfer them to a plate and add some sea salt flakes.
Add the cheese to the spaghetti and taste it. Add more salt, pepper and a bit of garlic powder if you want! Serve it with fresh grated cheese and top it off with the padrone peppers!
