Love for leftovers: Bacon rolls with chicken and green beans

Finally, we can welcome a new year tomorrow at midnight and open a new book! Or publish a cookbook! This recipe is, of course, the last recipe of the year that I can share with you, so I had to choose one that would be smashing and also one that you can put on the table with great ease!

I wanted to put something tasty, simple and beautiful on your table, so after some thinking my choice was made quickly. Today I lovingly present a snack that I came up with in the kitchen in a few minutes when I went through my fridge and saw that I still had oven-baked chicken and lots of green beans and some bacon.

And what can you make with that? Bacon rolls filled with fried chicken and green beans fried in garlic! And that goes into the oven for a while. You don’t have to bake it any further and just take it out of the oven and serve it on the platter. But how do I actually get here?

At a previous table my father asked if I would make bacon rolls with green beans and I said that I actually thought that was a bit too ordinary. Not that it isn’t tasty, but I don’t really think it’s an appetizer that you can really excel with, and I wanted to present great dishes on these tables. But now I came up with a different kind of roll that was very much appreciated by my husband and my father!

It is not that simple is never to my liking or that I look down on it, it is that I always want to push myself to come up with new ideas. It may also be the case that I often have an ingredient in my head for weeks and want to do something with it and then the moment comes when it is time for it!

For example, today I plan to cook a new recipe of my own that has been in my head for weeks, and it all started with the bone of a ham. I am very curious how it will turn out. We will see that tomorrow. Hopefully this new stew will become a fun new tradition, because Casa de la Vida is all about traditions!

And the best thing about the recipe I’m sharing with you today is that it’s easy to make with everything you already have in the fridge. All you need to add is a bit of dexterity.

Ingredients

These snacks are entirely dependent on the quantities you have in your house and also what meat you have in your house.

  • green beans, blanched
  • shredded chicken or chicken strips
  • slices of bacon
  • garlic, chopped
  • salt
  • pepper
  • butter and olive oil

Preparation

Preheat the oven to 180 degrees and put a large pan with plenty of water on the fire. Add a little salt and bring the water to a boil. In the meantime, clean your green beans and cut the ends off.

Is your chicken cooked already? Then shred it into rough pieces. Is it still raw? Cut it into strips and fry them with olive oil or butter. Boil the green beans for about 5 minutes, then drain and rinse further with cold water and drain again.

Place a frying pan on the fire and melt the butter with the olive oil. Add the garlic and let it fry for a while but do not burn it. Then add the green beans and let them cook for 5 minutes. Add salt and pepper and stir well.

Prepare a baking tray with a sheet of oven paper. Let the chicken and green beans cool for a while and then get your bacon and a roll of cooking twine. If you don’t have a special cooking twine, you can also use toothpicks.

Grab a slice of bacon and put a few green beans and a little chicken in the middle of it. Roll the whole over so that the bacon in the middle keeps it together. Tie this bundle around the middle with some twine or stick two toothpicks through the middle so that the bacon roll stays together. Repeat until you have the desired amount and slide your baking tray full of bacon rolls into the oven. It takes about 10 minutes, or until the bacon is completely cooked!

Voilà, a tasty snack made entirely from leftovers!

The result

This dish was fun to make, simple and quick on the table and it is a delicious snack that will certainly steal the show! It was the first time I made this, but certainly not the last time! I have all kinds of great ideas and additions to these rolls!
