Do you ever have too many ingredients left over from your recipes? Or is your fridge too full of things that you cannot make a full recipe with? Maybe you don’t feel like running errands? Don’t panic, let your creative brain get to work!
These questions usually help you a lot:
- Do I feel like a bowl of soup or a real meal?
- Will I prepare it in a pan or in the oven?
- How much time do I have to to cook and then eat?
- Do I want to add meat or do I stick to a lot of vegetables?
- Which way do I want to go with the herbs?
- Will I still have enough for tomorrow or will I eat everything nicely?
If you can answer all these questions, you usually already have an idea what kind of meal you want to make for yourself. Then get creative and try something out! And otherwise there is only one thing to do: spice up a packet of noodles with vegetables and sit in front of the tube.
Since you probably don’t have exactly the same ingredients left in your fridge, this recipe doesn’t have a traditional ingredient list. You should mainly see this recipe as information, and an example of what you can do with the things you have at home.
Ingredients
What I shot in this photo was meant to be a late breakfast for my business partner and myself. I didn’t have that much in the fridge anymore. Just normal things like eggs, bacon and cheese. The avocado, bell pepper and grapes also had to be finished and then I got the idea!
What I ended up making are bell pepper rings filled with egg and bacon, on a bed of homemade guacamole with lemon juice, grapes and pepper and salt.
Preparation
First, I heated olive oil in a frying pan, then cut the pepper into large rings as straight as possible, and put it in the pan so that both sides could brown. Then I put the eggs one by one in a glass with a pinch of salt and pepper so that I could carefully pour them into the bell pepper rings.
The egg had to be fried equally well so that it remained in the bell pepper rings. Another option would have been to scramble the eggs a little first and then put them in the rings. The guacamole was made like this: Avocado mashed, a little lemon juice and then the grapes (cut in half) added.
Just fry the egg well so that it stays in the rings, if it doesn’t, you can scramble it a little and then put it in the rings. Then make the guacamole, mash the avocado and add a little lemon, cut the grapes in half and then add. Stir but not too much, add salt and pepper and then put on your plate.
I turned the rings over to make sure the egg was well fried. You could have left the egg yolk a bit runny. Then I served the pepper rings with egg each on a bed of guacamole.
Voilà, a delicious and healthy snack!
