Today it’s time for a nice breakfast with not too much fuss that falls into my category of ‘healthy eating’! I’ve often made delicious breakfasts of this kind, just simple: a nice yogurt with egg and then in the oven!
And yet I decided to do it a little differently today. I’ve got a lot of leftovers of the recipes and cooking for my cookbook that I am writing, so I thought, now I’ll make it this way! There are countless options with this type of breakfast. You can take it in any direction you want!
What you see is yogurt with oven roasted tomato salsa, an egg and baked chorizo with sunflower seeds! And yes, it is really delicious to eat with a piece of toast. It is also made very quickly and without getting any pans dirty!
I am not someone who likes to put meat on everything, but I am someone who really likes great flavor combinations. That’s why I came up with this idea: why not the delicious breakfast yogurt in the oven with chorizo on top? And why not make it with a delicious tomato salsa, right?
As you may already know, breakfasts and lunches are quite important to us. This way we start the day well and with a full stomach, so that we can continue throughout the day. Sometimes I really feel exhausted at the end of the day. Luis and my father too, of course, but they don’t spend nearly 16 hours a day cooking, writing and the like. And that secretly eats a lot of energy. We cooks are known for barely eating while cooking, just bits to taste, a spoonful here and there.
What better and more delicious filling breakfast than eggs and yogurt from the oven? It doesn’t get any better, if I say so myself. That’s why I thought, let me share this delicious recipe with you. This is another side of me that you can get to know!
Let’s hop into the kitchen and get started! And because I am in a good mood, I’ll also immediately share my recipe for roasted tomato salsa with you. The best thing is that all of this can also be made per person. It’s best to use cazuelas, the Spanish terracotta dishes. But IKEA also sells really handy skates in the 365+ series, which can be put in the oven, microwave and freezer!
- dash of olive oil
- handful of cherry tomatoes (2 normal tomatoes will also work)
- 1 red onion (in wedges)
- 2 cloves of garlic (crushed, but still in the skin)
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
Filling, per person
- chili flakes
- 2 eggs
- 3 tablespoons of Greek yogurt (normal yogurt will also work)
- 2 tablespoons of tomato salsa
- salt and pepper (for on top of the yogurt)
- 2 teaspoons of olive oil (for on top of the yolks)
- 1/2 fresh chorizo (dried chorizo is also possible)
- 1 tablespoon of sunflower seeds
- 1 teaspoon of oregano
- olive oil
Preheat the oven to 180 degrees. Place your cherry tomatoes, red onion, and crushed garlic cloves in an oven dish, sprinkle the salt, pepper, olive oil, thyme and rosemary on top and shake the dish back and forth. Put the dish in the oven for about 20 minutes and roast everything until the tomatoes soften. After about ten minutes, shake the bowl to loosen everything.
Remove the dish from the oven and let it cool for a few minutes. Remove the shells from the garlic cloves and use a small blender or a food processor to blend everything together with a little olive oil until it is an even liquid. If you want it a bit spicier, add some cayenne pepper!
In your small oven dishes or cazuelas, start with a layer of yogurt with a little salt, then the tomato salsa. The yogurt and salsa shouldn’t really mix. The eggs go on top of the salsa and then the chili flakes, pepper and olive oil over the yolks. Return the ramekins to the oven for another 25 minutes, until the egg yolk is completely set.
In the meantime, take the skin off your chorizos. Put a pan on the stove and heat a drizzle of olive oil. Tear or cut the chorizo and fry the sausage along with the oregano and sunflower seeds and a little pepper over medium heat for 5 minutes.
Remove the oven dishes from the oven, sprinkle the chorizo on top as a topping and serve your delicious breakfast or lunch immediately.
Voilà, enjoyment is all you have to do with this captivating breakfast!
This dish is made entirely of left overs, can you imagine that? I always have the sunflower seeds in stock because I really love them. I am just addicted to them and here they really cost next to nothing!
The amount of salt in this dish really depends on your own choice. I also like to add no salt at all (or as little as possible) to some dishes, and this dish is one of them. Because you put the sausage on top you really hardly need any salt, but that is of course my own opinion.
And what I found funny was that my father actually said ‘I really never thought to put yogurt and eggs in the oven together, but of course you do, Tatiana! And you always amaze me! I like which one more. No, but not. ‘
