Black beans with coconut milk, an adventure

Because we had water problems at home, the past week has been very hectic. I had big plans for my food spotlight this Monday, but the recipe I wanted to make couldn’t be cooked without water. But don’t worry, the ingredients have been absorbed into another dish.

After making my vegan chili I had black beans left, as well as sweet potato grilled in the oven and a can of coconut milk that I opened the day before. So I started looking for something I could make from these ingredients. And I had been standing on my feet in the house for a while (cleaning up, cooking and cleaning up again), so I was tired. Thinking up new recipes day in and day out can be a lot more tiring than you might think. I didn’t feel like making difficult things anymore, so I heated some oil in a pan and the rest came by itself.

Ingredients

  • 1.5 teaspoons of oregano
  • 2 teaspoons of garlic powder
  • 1 teaspoon of cumin powder
  • 2 shallots, chopped
  • 400 gr sweet potato, from the oven or fresh in cubes
  • 400 gr black beans, drained
  • 1 ecological stock cube
  • 1 liter of water
  • 400 ml (1 can) of coconut milk
  • olive oil
  • salt and pepper to taste

Preparation

Heat olive oil in a stockpot and add the shallots, oregano and garlic powder. Sauté briefly and then add the sweet potato, black beans, cumin, and salt and pepper. Stir well, then add a little olive oil and then the cold water.

Let your soup simmer for a while, then add the stock cube, mash the soup a little while stirring well and let the pan come to a boil. Then take it off the heat, grab a hand blender and mix it all smoothly. There will be skins of the beans in the soup, but that’s how it should be. You can choose to strain the soup to get the bean skin out, but I like a rough soup with some texture.

Add the coconut milk, stir well and then you can taste. Do you miss salt or pepper or cumin? Then you can add that. I have kept this soup simple and tasty, but you can always adjust things! Chop a little coriander and sprinkle it over the soup with a splash of lemon juice and enjoy!

The result

Sometimes I really feel like spending hours and days in the kitchen, but sometimes I don’t. This soup is an example of a recipe that I made because sometimes I just want to get rid of things in a good way, for example by making a soup. Fast, simple and easy to prepare.
