An impossible tasty combination with chicory

Something I always really enjoy doing in my kitchen is combining crazy flavors and presenting them on the table. And a healthy Wednesday cannot be missed at Casa de la Vida, so it is a great opportunity to present you my crazy and fresh salad!

This salad and combination of flavors take me back to my childhood. We used to eat chicory with tangerines, apple, bacon and Roquefort! That was my father’s thing. He made this a lot, except I barely ate blue cheese because it gave me a crazy allergic reaction. Fortunately, this is no longer the case today. They sometimes say that you can get over the allergies you had as a child, and I am very happy that I got over my allergy to blue cheese!

But back to this salad: how did I come up with serving it as finger food? Very often at parties or events I felt like a little fresh salad, but this is never served because people are standing and it is not so easy to eat salad. So what better than using a leaf of chicory as a plate?

So, check out my recipe for the fresh chicory salad and the finger food version here! Food that is easy to pick up and eat, and that keeps your fingers clean. You can also just serve the finger food version on a plate when you have guests, because it is just really nice. Plenty of options!

Ingredients

Count on half chicory per person

  • 2 chicory, whole
  • 1 red apple, with skin in small cubes
  • 2 tangerines, cut into pieces
  • olive oil
  • salt and pepper
  • toppings *
  • chives
  • lemon juice
  • Roquefort, crumbled

Preparation

This recipe depends entirely on how you want to serve it. I’ll give you below two ways you can serve it.

First way:

If you want to present it in a chicory leaf, leave the chicory whole and follow these steps:

First, gently mix the apple, tangerine, olive oil, salt and pepper in a large bowl. Cut the bottom of the chicory, take a leaf and place it on your plate with the convex side at the bottom. Fill the leaf to the edges with one or two tablespoons of your fruit mix. Make sure it is not too full, because then the chicory leaf can break. Drizzle a little lemon juice over it and a little crumbled roquefort with the chives. Voilà, a tasty and healthy snack for your party!

Second way:

Do you want to present this salad in its original form, so as a more traditional salad? Then cut the chicory lengthwise (aka a la julienne) and mix the fruit salad as in the first version. Arrange the sliced ​​chicory like a star on a plate and place a heap of the salad in the center. Finish the presentation with thin slices of chicory over the heap of salad. Top it all off with a dash of lemon juice, and the roquefort and chives on top.

The result

A fresh but awesome salad for your guests or for yourself. If I wanted to, I could really eat pounds of it. Firstly, I really love salad, secondly tangerines and thirdly, the crazy taste of chicory. And you will notice that more often, because I really know many recipes with chicory. So be ready!
