I’m going to be very honest with you: Before today I had never made a crumble, even though I was addicted to them before. I used to buy them pre-made in the supermarket all the time. And because it’s now our sweet potatoe month, I had a lot of sweet potatoe left over that I’d already cooked. And because a crumble is quite quick to make, I decided to combine my craving for crumble and my surplus of sweet potatoe in a new recipe.
And I have to say, this turned out to be a delicious treat! This is a recipe that I’ll be using more often in the future. Now that I’ve got a way to bake crumble using sweet potatoes, I’m afraid that I’ll be gaining weight again, as this is an easy recipe that takes only fourty minutes and very little effort.
Ingredients
Batter:
- 500 gr sweet potatoe
- 25 ml milk
- 25 gr brown sugar
- 1 teaspoon of vanilla extract
- 1 egg, beaten
Crumble:
- 40 gr flour
- 50 gr brown sugar
- 4 tablespoons of softened butter
- Chai mix
- lemon zest
Instructions
Batter
Bake 1.5 sweet potato as usual. Preheat the oven to 160 degrees and get a medium sized baking dish. In a large bowl, mix the egg with the sweet potato, sugar, vanilla extract and milk until combined. Then move the batter to the baking dish.
Crumble
For the crumble, mix the flour, sugar and butter together until it turns grainy. Then add a little of the chai mix. Spread the crumble on top of the batter in the baking dish. Then grate the lemon over it and put the dish in the oven for 30 minutes or until the crumble turns brown.
The result
The taste of vanilla and sweet potato in this crumble is unbelievable. I’ve really never tasted this combination of flavors before in my life. I think the egg, milk and vanilla really brought out the flavor of the sweet potato!
It was delicious. I have never eaten such a delicious crumble and now it turns out that my husband loves crumble. It took until now to find out. If I had known that before, I would of course have made a crumble much earlier!
