The first week of January 2021 is almost at an end and of course that means that you deserve a tasty and easy recipe for the weekend! When I look back at the past few days, I have to honestly say that I went outside my comfort zone. And not only because I cannot eat meat at all, but mainly because I started cooking things that I’m not at all used to!
Last Wednesday I got to know crunchy tofu and rice. The day after I got a nice rice with vegetables from my in-laws. Today I learned a new way to make a quick and healthy breakfast! Everyone in the house appreciated it and I’m sure Luis and my dad will ask for it more often!
As a social media manager I spend quite a lot of time on all social media channels. Of course I see a lot of people passing by there and often I get ideas about how something can best be done. And I really enjoy doing it, I always feel like trying something out. Fortunately, otherwise I would be very boring.
Early this week I saw a video with instructions on how to make a grilled breakfast quesadilla. I got really hungry for it, but it was late at night and I had to go to sleep. The idea kept haunting my mind and I decided to cook anyway, but with my own ingredients and recipes! And what a treat it was!
I often find breakfast very difficult myself. I’m not a sweet tooth at all. Not only in the morning, but almost never, except for cakes and desserts. Luis, for example, has breakfast with cookies that he melts in his coffee and I always think that’s crazy and way too sweet. My father has breakfast with sandwiches, savory or sweet, but I am not a bread person at all. I would prefer to eat pasta, salad or soups, but that does not seem quite right with breakfast. That’s why it always makes me happy to find new ways to make a nice breakfast. And maybe I always like to have an extensive breakfast because I work from home and I just have more time to spend on my breakfast.
Of course not eating meat has disrupted my eating rhythm a bit, but this week I really saw what is possible with other ingredients. What a wonderful taste some things have when they are well prepared! And I want to share all this with you! Shall we start cooking?
Ingredients
For 4 quesadillas
These quesadillas have two fillings, but you can always cook with what you already have at home. That way you don’t have to throw anything away. These ingredients were all leftovers. So with these quesadillas you can use amounts of leftovers that may be too small to come up with another dish around it.
- medium tortilla wraps
- olive oil
- 2 eggs, beaten
- 1 tomato in slices
- avocado
- lemon juice
- salt and pepper
Filling 1
- 150 gr spinach
- salt and pepper
- 1 teaspoon of paprika powder
- 50 ml of fresh orange juice
- goat cheese, crumbled
- scrambled eggs
Filling 2
- mozzarella, grated or in chunks
- 50 gr mushrooms
- 1 tablespoon of herbs de provence
- scrambled eggs
- salt and pepper
Preparation
Heat 3 pans on the stove, all with olive oil. In the first pan you grill the mushrooms with herbs de provence, salt and pepper. In the second pan, let the spinach shrink with the orange juice, paprika powder, salt and pepper. In the third pan you make scrambled eggs.
Prepare all ingredients to make it easier to assemble your wrap. I myself have put everything in containers for easy access. Take your tortilla and use a knife or scissors to cut a straight line from the edge to the center of the tortilla.
Lay the tortilla flat again and turn it so that the cut you made faces away from you, to the 12 o’clock position on a clock. We are going to divide the tortilla into four parts, clockwise.
From twelve to three o’clock, place the spinach on the first part. The scrambled eggs are on the next part, from three to six o’clock.
Now comes a bit of a tricky part: Take the 12 o’clock point, the one where the spinach part starts, and fold it down to 6 o’clock, on the dividing line between the scrambled eggs and the empty half. It doesn’t matter if your filling shifts a bit, but it is nice if it is still a bit well distributed over the tortilla.
We continue to fill the second half. On the bottom half of the empty half of your circle, from six to nine o’clock, come goat cheese and freshly ground pepper.
Fold half of the tortilla you already folded over the goat cheese. You now have a semicircular tortilla in front of you with three fillings in it. Place the sliced tomato on the last quarter of the tortilla. Fold one more time and you have a nice triangle.
Repeat the entire process for the other filling. Use fried mushrooms instead of spinach and mozzarella instead of goats cheese and then fold the tortilla three times in exactly the same way.
I don’t have a toaster or grill at home, so I used my grill pan to bake the filled tortillas. I did it like this: Heat olive oil in the pan over high heat, put the thickest wrap in the grill pan first and press it a bit to make it a bit thinner. You can put weight on it with something heavy, or keep pressing. I myself put a cutting board with a jar of flour on it. After a few minutes, turn the wrap and let it grill this side too!
I took the wraps out of the pan when the cheese started to melt and run into the pan. In the meantime I made my own quick guacamole, by mashing the avocado, mixing it with a little salt, pepper and lemon juice!
Voilà, a delicious, quick and healthy breakfast that everyone will love!
The result
When I saw the video online I have to admit that I actually thought it was really brilliant to make and grill a wrap in this way. Why hadn’t I thought of this before? But I think I’m certainly not the only one who thought that!
Secretly you can make this wrap with anything you have at home, but I actually wanted to stick to classic flavors and combinations. That’s why I chose these fillings. And luckily there are more breakfast moments during the week, so there is more than enough opportunity to experiment with other fillings!
Somehow I know that there are many ways to have a delicious breakfast, but sometimes it is just hard to come up with something. That’s why I keep trying new things! And omitting meat becomes very easy, I just had to get in! By the way, I now realize that I ate more meat than I thought. So you see that this challenge opens your eyes!
